Peanut Berry Smoothie

Ingredients:

2 to 3 tablespoons Nature's Earthly Choice Peanut Powder
1 cup frozen berries
1 ½ cup milk of choice
½ banana
½ tablespoon pure vanilla extract
1 tablespoon honey or maple syrup

 

Directions:

  • In a blender, combine peanut powder, berries, milk, banana, vanilla extract, and honey.
  • Cover and blend until smooth.
  • Pour into a glass and garnish with frozen berries, oats, coconut flakes, or more peanut powder.

Peanut Butter & Jelly Granola

Ingredients:

2 cups old-fashioned oats
½ cup Nature's Earthly Choice Peanut Powder
1 teaspoon ground cinnamon
½ cup honey or maple syrup
3 tablespoons olive oil
1 tablespoon pure vanilla extract
½ cup jelly of choice
¾ cup raisins or dried cranberries
Butter or olive oil for greasing

 

Directions:

  • Pre-heat the oven to 350 degrees Fahrenheit. In a large bowl, combine the oats, peanut powder, and cinnamon. For a stronger peanut flavor, feel free to add more peanut powder.
  • In a separate bowl, combine the honey, olive oil, and vanilla extract. Drizzle over the oat mixture and mix well.
  • Add jelly of choice and stir until thoroughly combined.
  • Transfer the oat mixture onto a greased baking sheet, making sure to spread it in an even layer. Bake for 15 minutes or until toasted, tossing halfway.
  • Mix in the raisins. As the granola cools, it will harden up and become crunchy.

Peanut Hot Chocolate

Ingredients:

1 ½ cup milk of choice
⅓ cup dark cup chocolate chips
2 to 3 tablespoons Nature's Earthly Choice Peanut Powder

 

Directions:

  • In a small pot over low heat, warm the milk. Do not let it boil.
  • Add the chocolate chips, stirring continuously to prevent them from settling on the bottom of the pot.
  • Add the peanut powder and mix until dissolved. Pour into a mug and garnish with marshmallows, coconut whipped cream, melted chocolate, peanut butter, or any of your favorite toppings. Serve hot.

Baked Peanut Salmon with Coconut Rice

Baked Peanut Salmon with Coconut Rice

Ingredients:

1 cup rice of choice
1 ½ cups coconut milk
4 salmon fillets
1 egg
¼ cup Nature's Earthly Choice Peanut Powder
¼ cup seasoned bread crumbs
¼ teaspoon salt
1 teaspoon ground black pepper
½ to 1 teaspoon ground cayenne (optional)
Olive oil for greasing

 

Directions:

  • Pre-heat the oven to 450 degrees Fahrenheit. Meanwhile, cook the rice according to the package’s directions, adjusting the coconut milk as necessary.
  • In a small bowl, lightly whisk the egg. In a separate bowl or plate, combine the peanut powder, bread crumbs, salt, pepper, and cayenne.
  • Dip each side of a fillet into the egg. Repeat in the peanut-bread crumb mixture, then place on a greased metal baking sheet. Repeat with the remaining fillets.
  • Bake for 10 to 14 minutes or until flaky. Serve with coconut rice and vegetables of choice.

Dark Chocolate Brownies

Ingredients:

1 cup + ⅓ cup dark chocolate chips, separated
⅓ cup olive or coconut oil
2 tablespoons milk or cold coffee
2 eggs
1 cup organic cane sugar
1 teaspoon pure vanilla extract
¾ cup all-purpose white or whole wheat flour
⅓ cup Nature's Earthly Choice Peanut Powder
¼ teaspoon salt
Butter or coconut oil for greasing

 

Directions:

  • Pre-heat the oven to 325 degrees Fahrenheit. In a small pot over low heat, combine 1 cup dark chocolate chips, olive oil, and milk or coffee. Stir continuously until the chocolate is completely melted.
  • Transfer to a large bowl and add eggs, sugar, and vanilla. Mix well.
  • Add flour, peanut powder, and salt. Stir until combined. Fold in the remaining ⅓ cup of dark chocolate chips.
  • Pour into a greased 8-inch square baking pan. Bake for 37 to 40 minutes or until a toothpick comes out clean. For fudgier brownies, bake for 35 to 37 minutes. Cool, slice, and sprinkle with more peanut powder.

Peanut Cheesecake Overnight Oats

Ingredients:

½ cup old-fashioned oats
2 teaspoons chia seeds
1 tablespoon Nature's Earthly Choice Peanut Powder
¼ cup vanilla or plain yogurt
2 teaspoons honey or maple syrup
¼ cup milk of choice
¼ cup softened or whipped cream cheese
1 graham cracker, crushed

 

Directions:

  • Combine oats, chia seeds, and peanut powder. For a stronger peanut flavor, add more powder. Mix in yogurt and honey.
  • Transfer to a jar. Add milk and stir well.
  • Tightly cover the jar and refrigerate overnight, or at least 6 hours.
  • For silkier oatmeal, add more milk. Top with cream cheese and graham cracker crumbs.
